Boil 3cm of water in a large pan. Add the asparagus and cook, uncovered until tender-crisp. In a medium bowl, whisk the egg, egg whites and 2 Tbsp of water until completely blended. Spray 20cm pan with canola spary. Pour in egg mixture. Cook until egg sets. Rotate pan to allow all egg to set. Fill one half of omelette with asparagus, mushrooms and cheese.
