Make or purchase 1 bottom pie crust. Partially bake crust in 425 oven for 10-15 minutes. Let cool. Do not turn off oven.While pie crust is baking, saute mushrooms in butter or oil.In medium-large bowl, whisk together eggs, milk, nutmeg, salt and pepper.Sprinkle grated cheese over bottom or pie crust, distribute mushrooms over cheese.Pour egg mix over all and return to 425 degree oven for 15 minutes. Reduce oven heat to 350 degrees and cook for another 25 minutes.
