12 oz Barilla Plus Rotini (or pasta of choice)
8 oz baby portobella mushrooms, sliced
1 medium onion, chopped
1 T light butter
1/2 T extra virgin olive oil
2 c mushroom broth
2 T flour
1/4 tsp dried rosemary
1/4 tsp ground sage
1 cup Greek yogurt
1/4 shredded Parmesan cheese
1/4 c fresh parsley, chopped
salt & pepper to taste
pine nuts (optional)**



How Do I Make Hearty Mushroom Stroganoff?

Here is how you make Hearty Mushroom Stroganoff:

Cook pasta according to package directions; drain. Meanwhile, in a medium mixing bowl, combine broth, flour, sage, and rosemary. Whisk till well blended; set aside. Heat butter and oil in skillet over medium heat. Add mushrooms and onions and season with salt and pepper. Cook till onions are softened and mushrooms are golden, about 4-5 minutes. Spoon vegetables into bowl and set aside. Return skillet to heat. Add broth mixture to skillet and bring to a simmer over medium heat, whisking occasionally to prevent sticking. Cook till mixture is thickened, about 10-12 minutes. Stir in Parmesan cheese and reduce heat to low. Continue stirring until cheese is melted. Remove skillet from heat and add parsley and yogurt. Stir until well blended. Add mushrooms and onions back to skillet and mix well. Add salt and pepper to taste. Spoon sauce over pasta and top with 1 T of chopped pine nuts, if desired.
