Sauce:
1 1/4 to 2 lbs. tofu
2 to 3 T. water
1 T. tamari soy sauce
1 T. vinegar
1 small clove garlic, minced
1/2 t. grated lemon rind
1/4 to 1/2 t. ground ginger

2 to 3 C. cooked brown rice
1 to 2 T. plain yogurt or sour cream
12 almonds (optional)
1 T. fresh parsley (optional)

Here is how you make Tofu Mushroom Stroganoff:

Saute garlic, onion and mushrooms in oil. Mix xauce ingredients in blender or food processor until smooth. (The sauce may be made the day before and stored in the refrigerator, if you wish). Stir sauce and oregano into the mushroom mixture. Heat through. Serve over brown rice, topped with a teaspoon of yogurt.
