Instructions:1. Combine all the ingredients for the dressing into a medium size bowl. Whisk until everything is combined and put aside.2. Hard boil the egg for about 9 minutes.3. While the egg is cooking, cut up the carrots.4. In a sauce pan over medium heat, pour a teaspoon of oil olive into the skillet and add the mushrooms, spinach and carrots. Mix together and let it cook for about 10 minutes or until the vegetables are soft.5. When the veggies are almost finished, cook soba noodles for about 4 minutes in a large pot.6.
