How Do I Make Strawberry Baked Oatmeal Cups?

Here is how you make Strawberry Baked Oatmeal Cups:

Mix applesauce, honey, egg, mashed banana, vanilla together. Add in oats and flax meal, baking powder, salt, nutmeg and mix. Add milk, mix well. Add strawberries, reserving about 1 cup to sprinkle on top. Spray a 12 cup muffin tin with cooking spray (I prefer Pam "baking" spray, things never stick!). Fill each muffin tin to the top, then sprinkle with strawberries (you'll have to make 2 batches, FYI). Bake at 350 degrees for 35 minutes (make sure tooth pick comes out clean). Let sit in the pan for 10 minutes to cool, then transfer to a cooling rack. Refrigerate or freeze and eat as desired. I recommend heating them up in the microwave first (15-30 seconds).
