F (about 190? C) Lightly spray square baking pan (I used Pyrex) with sunflower oil or oil of choice and set aside. In a large bowl, mix together the oats, coconut, chia seeds, wheat germ, hemp hearts, cinnamon, salt. Mix in both milks, maple syrup, and all fruits. Pour entire mixture into oil pan and bake 40-50 minutes, or until oatmeal is "set". Serve with additional milk, maple syrup, or coconut whipped cream* (optional) Refrigerate leftovers up to 4-5 days, covered. To reheat, mix in a little more milk of choice, cover, & microwave 1-2 minutes, until warm. You can also combine some of the baked oatmeal with a bit of extra milk and heat in a small saucepan on the stove for a few minutes. NOTE: Coconut Whipped Cream: Refrigerate a can of full-fat coconut milk overnight. After it is chilled well, remove the firm coconut cream from the can, placing into a small mixing bowl. Discard the coconut water left in the can or save for another use. Add 2-3 teaspoons of maple syrup or other sweetener of choice to the cream and beat with a wire whisk or electric mixer until fluffy. Serve oatmeal with a dollop of the cream. Bon appetit !!
