Here is how you make Mint and Chevre Omelette:

Lightly beat whole egg, egg whites and salt & pepper to taste.Melt butter in a well-seasoned cast-iron or a non-stick saute pan on medium heat until foaming. Fry most of the mint for a minute or two until it turns bright green and you can begin to smell it. Pour in the beaten egg mixture and swirl around pan.
