Cook covered for 5 minutesSlice, deseed, chop peppersAdd to frying pan after 5 minutes adding more water if needed and cook for approx 5 minutes until slightly softened. While peppers/onions are cooking whisk your eggs with any spices/salt/pepper you desireIncrease heat and uncover to get rid of the rest of the water from steaming. Add herbs of your choice.Add eggs and stir gently. Reduce heat back to medium and allow to cook until done about 1/2 way through. Place pan under broiler and keep checking until the top is cooked and going golden brown.
