Add salt and pepper and set aside. Cut avocado in half and remove pit. Score the avocado lengthwise and crosswise to create small squares of avocado. Scoop out half of one side of the fruit (you are only using 1/4 of the fruit for this recipe). Add the avocado to the bowl with egg white and milk mixture. Dice the plum tomato and add it to the same bowl. Stir gently and set aside. Add olive oil to a skillet and sautee mushrooms, scallions, garlic and shallot for about 1 minute. Spread the veggies out into the bottom of the skillet and pour the egg white mixture over the top into the same skillet. Sprinkle the cheese on top of the omlette while it is still open. Let the omlette sit until it is firm enough to fold in half. Once the omlette is folded, cook for 1 to 2 more minutes on low heat. Serve hot. Still hungry? Consider serving with mixed fruit, mixed greens tossed in oil and vinegar or some tomato slices.
