Add flour, egg white, baking soda, vanilla, and salt. Whisk just until blended. Stir in blueberries. Let stand 10 min.Heat a griddle to 350 F. Lightly spray with spray butter. Pour the batte in 1/8 c dollops onto the griddle. Cook about 2 minutes, or until bubbles appear on tops and the bottoms are golden brown. Flip. Cook about 2 min. more. Transfer to oven-proof plate and cover with aluminum foil. Place in oven to keep warm until ready to eat. Makes 8 pancakes.Place 4 pancakes on each of 2 serving plates.
