This is my Mom's recipe for Blueberry Pancakes. If done correctly, they are so light and fluffy...and a short stack will fill you just fine. Especially if you add a couple strips of bacon or a sausage patty. What Are The Ingredients For Grandma's Blueberry Pancakes Recipe?The ingredients for Grandma's Blueberry Pancakes are: 2 1/2 cups flour6 teaspoons baking powder 2 Tablespoons sugar 1 teaspoon salt 2 beaten eggs (Eggbeaters work fine too) 2 cups milk (I use 2 %) 4 Tablespoons vegetable oil (can't substitute Olive Oil for this one...they taste funny) How Do I Make Grandma's Blueberry Pancakes?Here is how you make Grandma's Blueberry Pancakes: Combine all dry ingredients. In a separate bowl, combine egg, milk and oil. Add to dry ingredients, stirring just until moist and most lumps are gone. Add blueberries. If you don't mind your pancakes being blue, give it a good quick mix to break up the berries and mix the flavoring throughout the batter. Otherwise, mix slowly and carefully and do not overmix. Drop 1/3 cup of batter onto hot griddle, skillet, or electric skillet that has been sprayed with cooking spray. When there are a lot of bubbles and the edges look dry, lift up pancake to see if it is brown. Flip over.
