1 t. vanilla extract
1/2 c. coconut flour
1 t. baking soda

Here is how you make Coconut Flour Pancakes:

Mix all wet ingredients (eggs, applesauce, vanilla extract).In a separate bowl, use a fork to press out all of the lumps in the coconut flour, then mix in baking soda. Slowly stir dry ingredients into wet ingredients.In a preheated pan, place 1/4 c. batter for each pancake. (Note: I use margarine on my pan so that the pancakes won't stick. I don't know how it would fare using nonstick cooking spray or any other type of oil.) Due to the consistency of this mixture, I've found it easiest to use a tablespoon to place the appropriate amount and then use the backside of the spoon to smooth it into a round and flat shape. Cook for approximately three minutes on each side. I've found coconut flour yields a more delicate product, and that it's helpful (for me; maybe you're more dextrous with a spatula) to use two spatulas to gently flip over each pancake.Serving Size:?Serving size is one pancake (from approximately eight pancakes per batch)
