Beat the eggs in a small bowl for 2-3 minutes - until they are light and fluffyAdd the milk, honey and vanilla extract and beat until incorporated.In another bowl, sift together all the dry ingredients. Add 1/2 the wet ingredients, incorporate, then add the rest and mix well. Let it sit for 5 minutes. The batter should be thicker than normal batter - like brownie batter in consistency. If it's thicker than that, add a little more milk.Heat about a tsp of oil or butter on your griddle or pan on medium heat. When the oil is hot, add a tablespoon of the batter, smoothing it with top of spoon. This makes a silver dollar size pancake which I have an easier time flipping and which I think seems fluffier - but you can make larger pancakes if you like. Makes 16-20 pancakes - enough for 4 people.
