Stir until well mixed. In a separate bowl, put egg substitute and beat on high speed until soft peaks form--in about 30 seconds or so. (NOTE: Beating egg substitute won't give the same results as beating egg whites. You won't get high "peaks," you'll still incorporate enough air into the egg substitute to provide "lightness" to the pancake batter.) Stir the dry ingredients into the soy milk mixture, adding more soy milk if the batter is too thick. It should be the consistency of heavy cream.
