Riinse the curds under cold water to remove the lemon taste and let drain.2. Gther orners of the cheescloth together and tie the curds into a tight bundle. Place the bundle on a sloping cutting board in the sink. Place a heavy weight, like a cast-iron skillet on top. Press the curds for 2-4 hours or until firm.
