Mix in spices and veganaise. Add spinach a bit at a time until cooked down. (about 10 min). Meanwhile saute paneer in remaining oil, until brown on all sides. Pour spinach mixture into a food processor. Add soy milk and blend until pureed. Pour back into saucepan, add tomato and heat. Add browned paneer, mix and heat through. Serve over brown basmati rice.
