Add onions and cook until starting to brown--do not burn. Crush fenugreek leaves and add to pot, stir, and cook a minute. Add chiles, ginger, garlic, cumin powder, turmeric, tomato, lemon juice and salt. Cook 10-15 minutes.Add spinach, cook 5-10 minutes.Using a stick blender, pulse mixture until slightly pureed. Do not over-process. It should still have texture, not be like baby food.Add paneer, half & half, milk, and garam masala, heat through.Makes 8 1-cup servings.
