Here is how you make Quick Tomato Baked Tofu with Whole Wheat Pasta and Sauted Zucchini:

Makes 4 generous servings. Baked Tofu:Rinse and press tofu, slice into 8 pieces. Pour some of sauce in an 8x8 baking dish and place tofu on top. Pour remaining sauce over tofu. Let stand and marinade. Preheat oven to 450 degrees, bake for 25 minutes or until bubbly and hot. - Wash and slice zucchini.- Boil pasta according to package directions. - While pasta cooks, saute zucchini with olive oil and salt & pepper to taste. - Divide pasta into four servings.
