3 lbs Fresh Fava Beans, shelled and skinned (or 1 pound dry Large Lima Beans, soaked and cooked until tender)
1 1/4 lbs Ripe Tomatoes (peeled and chopped)
2 Garlic cloves
1 tbs Olive Oil (to taste)
1 tsp Balsamic Vinegar
2 tbs fresh mint of basil, chopped
1 lbs Rigatoni or Penne
1/2 crumbled Feta
salt and pepper to taste

Here is how you make Greek Pasta with Tomatoes, Beans and Feta:

(If you are using the fresh fava beans, bring a large pot to rolling bowl. Add a generous amount of salt and your beans. Boil for 1 minute then remove with a slotted spoon and shock them in a bowl of ice water to stop the cooking process)In a large pasta bowl, toss together the tomatoes, garlic, olive oil, vinegar, mint and some salt and pepper. Add the beans, toss together, and allow to sit at room temperature for 30 minutes to an hour. Taste and adjust seasoning to your liking. You can make this several hours ahead of time is you wish.Bring salted water (you can reuse the bean water if you would like) to a boil and add the pasta.
