Preheat oven to 450 degrees, line a baking pan with foil. Toss veggies with 2 tbsp olive oil, salt, pepper, lemon juice, and italian seasoning. Meanwhile, cook pasta per directions. Heat remaining olive and margarine in large skillet. Add onions and garlic and saute. Mix in cooked pasta, lemon zest, and vinegar. Heat through then toss with roasted veggies.
