Preheat grill to medium. Slice 1 1/2 lb eggplants into 1/2 inch slices. Brush w 1 tb of olive oil. Grill, turning once, until tender and charred in spots, about 4 minutes per side. Let cool for 10 minutes. Chop into bite size pieces. Chop 1 pound of plum tomatoes. Toss w 3 tb of oil, 2 tsps fresh chopped oregano, minced garlic, ground black pepper, crushed red pepper and 1/4 tsp salt in large bowl. Cook pasta. Add chopped eggplant and 1/2 cup chopped fresh basil to tomato mixture. Serve tomato mix over top pasta. Sprinkle with cheese.
