2 oz. Barilla Plus Penne Pasta
3 cloves garlic, minced
3-4 T. shallots, minced
1/2 C. yellow onion, chopped
10 oz. grape tomatoes
3 cups cubed eggplant
1/2 can tomato paste (3 oz)
4 oz. dry white wine
1 1/2 Cup chick peas, rinsed and drained
5-6 leaves of fresh basil, chopped



How Do I Make Nancy's Italian Penne Pasta?

Here is how you make Nancy's Italian Penne Pasta:

Bring water to a boil, add 1 tsp. salt and penne pasta. Cook for 10-12 min, or until al dente. While pasta cooks, saute garlic, shallots, and onion in olive oil and saute until wilted. Add grape tomatoes, cubed eggplant, the tomato paste, white wine, and dried oregano. Saute w/ lid on until tomatoes soften/burst and eggplant is cooked through. Add chickpeas, stir, and heat through. Reserve about 1/2 cup of pasta cooking water, then drain. Add pasta to the pan, stir and mix vegetable mixture with pasta, adding a bit of the pasta water a little at a time until the mixture is moistened. You may add salt to taste if you are not sodium restricted. Stir in the fresh basil leaves, and heat gently, being careful not to overcook the basil.
