3 large eggs, beaten
1 c. 2% milkfat cottage cheese
3 T grated Parmesan cheese
2 c. cooked elbow macaroni

Here is how you make Eggplant "Lasagna Pasta":

Makes 4 generous servings. Heat the oil in a large skillet over medium heat. Add eggplant & onions. Cook, stirring frequently, about 10 mins. Reduce heat to low. Add tomato paste, wine, salt, oregano, & cinnamon. Simmer, stirring ocassionally, 15 mins. Preheat oven to 350 degrees.Spray an 8" baking pan with cooking spray. Combine eggs, cottage cheese and Parmesan in a small bowl. Spread 1 c. of the eggplant mixture into bottom of 8" pan. Top with the macaroni, then the cheese mixture, then the remaining eggplant.
