1 lb pasta (I used Barilla Tiny Twists, I think any smaller pasta would work)
Onions, raw, 1 medium, chopped or sliced into small strips
Cauliflower, raw, .5 head, medium (5-6" dia), cut into small florets
Carrots, raw, 2 medium, peeled and sliced diagonally into small pieces
Red bell pepper, 1/2 pepper, chopped
Yellow bell pepper, 1/2 pepper, chopped
Zucchini, 1 large, diced
Extra Virgin Olive Oil, 1/4 cup plus about 2 tbsp
Lemon Juice, 1/4 cup
zest of one lemon, peeled into strips and 1/2 diced finely
Dijon Mustard, 2-3 tbsp
Garlic, 8 cloves, smashed with a garlic press
Salt and pepper
Fresh cilantro to garnish

Here is how you make Lemon Garlic Pasta with Veggies:

Prepare the pasta per label directions (if you like your pasta al dente, cook 1-2 minutes less than recommended time). Prepare the sauce and saute the veggies while the pasta is cooking. In the last 2-3 minutes of cooking, add the strips of lemon zest and the carrot and cauliflower to blanch. When done, drain but do not rinse. Remove the lemon peel if desired, or leave in if you like it (I do!)Whisk 1/4 cup olive oil, 1/4 cup lemon juice, 2-3 tbsp mustard, diced lemon zest, and garlic in small bowl.Heat 1-2 tbsp of olive oil in a large skillet on medium high heat. Saute the onion until soft. Add the zucchini and peppers. Saute another few minutes. Add the pasta and blanched veggies. Mix well. Add the sauce, mix well, and bring to a simmer over medium heat. Once mixed well and heated through, serve.
