2 tsp olive oil
1 medium onion, chopped
2 cloves garlic
1/2 pound fresh asparagus, chopped into 1 inch pieces
1 medium red bell pepper, diced
1 cup garbanzo beans
1 small can diced unsalted tomatoes
1/4 cup fresh parsley
1/2 pound whole wheat short pasta (I used corkscrews)


How Do I Make Mediterranean Style Minestrone Pasta?

Here is how you make Mediterranean Style Minestrone Pasta:

Cook pasta according to package directions. Saute onion and garlic with oil in medium saute pan. When soft, add asparagus and pepper, stirring frequently. Add Garbanzo beans and stir to combine (mine were frozen, so I stirred until they thawed). Add diced tomatoes. Simmer for about 10 minutes until all are incorporated.
