1.5 c whole grain pasta (spaghetti)
1.5 tbsp olive oil
1/2 medium onion, diced
half green bell pepper, sliced
half red bell pepper, sliced
1/2 garlic clove
1/4 c cooking wine
1c fresh spinach (about 2 handfuls)
1 tbsp walnuts, coarsely chopped


How Do I Make Whole Grain Pasta with Fresh Peppers?

Here is how you make Whole Grain Pasta with Fresh Peppers:

1. Boil noodles in water (most take 9-11 minutes to cook)2. Use 1 tbsp of oil to saute onions until clear3. Add in green peppers, red peppers, and garlic and a little bit of water. Cover with a lid and steam for about 3 minutes. 4. Uncover pepper mixture and add in cooking wine and season to taste (I use Old Bay's, but salt and pepper would work just fine too).5. Continue to simmer until 'sauce' has reduced and peppers are cooked, but slightly crunchy, about 3-4 minutes. 6. Toss in spinach to pepper mixture over low heat and mix around until spinach has wilted.7. Once pasta is cooked, drain and place on serving plate. 8. Top pasta with pepper mixture. 9. Drizzle remaining olive oil on top of the dish.10. Chop walnuts and use as a garnish to finish the dish.*This makes 2 servings!
