1 bag Trader Joe?s frozen artichoke hearts

Low sodium chicken or vegetable stock

Grated parmaggiano (or any other kind of sharp cheese)
4 oz dry Whole wheat pasta (I used fusilli)
Juice of 1 lemon


How Do I Make Roasted Artichoke Pasta?

Here is how you make Roasted Artichoke Pasta:

Cook frozen artichokes in microwave a shallow dish with a little water until soft, maybe 3 minutes (you can also boil them for 8 or so minutes). Drain artichokes and blot dry. Toss with thinly sliced or chopped onions (to taste, I used ? onion), crushed garlic (the more the better) and a few tablespoons of olive oil. Roast at 450 for at least 20 minutes, until they start to brown. In the meantime, cook the pasta. When the artichokes are nice and brown, transfer half of the mixture to a large saucepan. Add about 1 cup of chicken or veggie stock (more or less, depending on how thick you want the sauce). Squeeze in the juice of 1 lemon. Drizzle in about 1 tablespoon of olive oil. Blend the mixture with a stick blender until fairly smooth, but a few remaining little chunks are fine (I suppose you can do this in a regular blender or a food processor). Toss in the cooked pasta, some ground pepper, a little dried parsley and a little dried thyme. Add the remaining artichoke mixture. Stir in a big handful of raw arugula. Stir until everything is nice and combined and the arugula is wilted. Sprinkle some grated cheese on at the very end.
