Halve the chicory heads lengthways and slice each half. Peel and slice the onion through the root, into 8 wedges.Soften the onion in a knob of butter, in a large pan, for 10 minutes. Add the chicory, stir and cook for 10 minutes.Meanwhile cook the dried pasta following the packet instructions. Add the pack young-leaf spinach to the chicory, in batches, stirring to wilt. Drain the pasta and toss with the vegetable mixture, cheese and some seasoning.
