7.5 oz whole wheat pasta (reserve .25 cup pasta water)
1 lbs ground chicken (can substitute turkey)
2 tablespoons olive oil divided use
2 tsp garlic
1 medium red bell pepper cut in chunks
2 small zucchini cut in chunks
2 small yellow squash cut in thin strips
1 14 to 16 oz can of tomatoes
1 tsp dried basil
salt and black pepper to taste

Here is how you make Pasta with Zukes, Yellow Squash and Bell Pepper:

Cook ground chicken until no pink remains. Remove from pan and set aside.Cook and drain pasta according to package directions reserving 1/4 cup pasta water. In large saute pan heat one tablespoon olive oil add garlic saute 30 seconds, add green pepper, saute 1 to 2 minutes.Add zucchini and yellow squash, saute another 1 to 2 minutes.Return ground chicken to pan,and stir or toss to coat, add olive oil as needed to prevent sticking.Add basil and a pinch of salt and pepper to taste.Add pasta, and tomatoes and heat through.Stir or toss to heat and combine.
