Here is how you make Saute'd Squash and Pasta:

- begin by boiling your water for you pasta. that will take up the majority of the time for this recipe.-start slicing your zucchini into 1/4 inch slices and put them into a skillet with your olive oil and begin to saute them for 5 minutes.- add your minced garlic to the mixture and let it go for another minute.-when the outside begins to soften but the inside is still crisp, add your salt, pepper, and cumin. by this time, the squash should begin to caramelize slightly.- turn the burner off and place a lid on the skillet. the squash will finish with residual heat.add the pasta to your water and cook as directed based on the pasta you use (i personally use either angel hair or linguini)when the pasta is done to your desired consistency, add to your squash and stir. add extra olive oil if necessary to coat pasta. the pasta should not change color, but this will get all the flavors out of the pan. your dish is now ready to serve.Serving Size: make 2 2 cups portionsNumber of Servings: 2Recipe submitted by SparkPeople user HELLKAISER.
