I came up with this recipe to fullfill a craving I had for italian cheesy goodness.The nutritional information for this recipe is broken down to the number of manicotti I was able to stuff. What Are The Ingredients For Stuffed Pasta Filling Recipe?The ingredients for Stuffed Pasta Filling are: 1 Cup 2% Cottage Cheese1/2 Cup Part Skim Mozzarella 2 Tbsp Olive Oil 2 Medium Onion, chopped 3 Cloves Garlic, minced 1.5 Cups Mushrooms, chopped 3 cups Fresh Spinach, chopped 15 Fresh Basil leaves, chopped 1 Sprig Rosemary, chopped 1 Tsp Lemon Thyme, chopped Salt, Pepper, & 21 Seasoning Salute(salt-free seasoning) How Do I Make Stuffed Pasta Filling?Here is how you make Stuffed Pasta Filling: 1. Saute chopped Onions in olive oil for 5 minutes. Add minced Garlic and Mushrooms. Saute for 7-10 minutes longer, until mushrooms start to get a little color. Add chopped Spinach. Saute until wilted and cook off any excess water. Season to taste with Salt, Pepper, & salt-free seasoning. Set aside to cool.2. Mix together Cottage Cheese, Mozzarella, Chopped Herbs, and cooled Spinach mixture. Season to taste with salt, pepper, and salt-free Seasoning.Makes approx. 18 servings*** How to stuff an uncooked Manicotti Shell***Fill a sandwich bag with about a cup of filling. Press all filling towards one of the bottom corners. Using scissors cut a small hole in the corner. Put this corner inside a shell and squeeze filling into Manicotti until it just starts to come out of the opposite end.***How to bake a dish of Manicotti***Cover bottom of 9X13 in pan with about 2 cups of whatever sauce you like. Place stuffed shells into pan. Cover each shell with sauce making sure that all noodles have sauce in between them, so they won't stick together as they cook. Pour 1 cup of water on to pof the sauce, around the outside of the pan. Cover with foil and bake for 1 hour at 350. Remove foil, sprinkle with parm or extra mozzarella, and bake for an additional 15 until cheese is melted and browned. Let sit for 10-15 minutes to set, before serving.***Helpful Hint***I freeze these (seperately using the trays that the shells come in covered with foil) in sets of three (the serving size of shells) to have a quick yummy lunch or dinner.
