1 medium yellow squash (diced)
1 medium zucchini (diced)
2 cloves of garlic (minced)
1/2 of a large red onion (chopped)
1/2 of a large red bell pepper (chopped)
2 cups broccoli (florets)
2 cups spinach (chopped)
1 cup grape tomatoes (optional as garnish)
2 tbsp olive oil
Pam (spay for saute)
2 tsp Kirkland's Rustic Tuscan Seasoning
Romano cheese (optional-not included in calorie count)


How Do I Make Tuscan Vegetable Pasta?

Here is how you make Tuscan Vegetable Pasta:

Makes 10 1-cup servingsBoil pasta according to package directions. During the last 4 minutes of boiling time, add the broccoli to the boiling water. During the last minute, add the spinach to the boiling water. Drain the water. At the same time, in a separate pan, sautee the garlic in the olive oil for approximately 1 minute then add the onion for approximately 5 minutes. Next, add the red peppers, squash and zucchini. Add tuscan seasoning. Spray with PAM so veggies are coated. Saute for a few more minutes. When veggies are done, mix with pasta. Add diced grape tomatoes as garnish.
