1 large Eggplant
8 cloves Garlic
2 Yellow Squash
1 lb Asparagus
8 oz Mushrooms
1 large can dice tomatoes
1 jar marinara
2 cups water
1 package brown rice or whole wheat pasta
Spices-onion salt, Italian seasoning, crushed red pepper

(but really any mix of veggies you have on hand will work, this just happens to be an awesome mix)

Here is how you make Hearty Veggie Ragu with Brown pasta:

Cut 16 slits in eggplant and insert 1/2 clove of garlic into each slit. Bake at 350 for 45 min. Let cool until cool enough to handle. Scoop out eggplant with garlic and roughly cut into chunks.Chop remaining veggies; add onion salt, Italian seasoning and crushed red pepper to taste and sautee with eggplant in a little olive oil (optional) until all veggies are starting to get tender, about 15 min. Add jar of marinara, water and diced tomatoes and simmer 25 min. While that's cooking prepare pasta according to directions on package.
