Preheat oven to 350 degreesCut top off garlic head. Drizzle with olive oil and salt and pepper. Wrape garlic head in aluminum foil, and set on a baking sheet. On same baking sheet place tomatoes and drizzle with olive oil. Salt and pepper tomatoes, and mix with hands to coat evenly.On a seperate baking sheet place chopped eggplant, zuchinni, and onion. Repeat process with olive oil and salt and pepper. mix with hands to coat evenly. place both baking sheets in oven and cook for 25 to 45 mins. The tomatoes will be done when they start to burst.Meanwhile cook pasta according to packae directions. Drain and set aside.When tomatoes are done remove from oven and allow to cool slightly. Carefully unwrap garlic and allow to cool. once cooled a bit, in a large bowl sqeeze garlic from head into bowl. Add tomatoes and smash all with a potato masher. Remove vegetables and add directly to tomatoes. Add pasta and stir all together.
