1 box angel hair pasta (I use Barilla Plus)
1 large ear of corn
1 tbsp cornstarch
2 cups skim milk
1 tbsp olive oil
cooking spray
1 medium onion, diced
4 cloves garlic, diced
2 medium zucchini, diced
1 green pepper, diced
2 tomatoes, diced
10 leaves sweet basil, minced
5 leaves basil, minced
10 leaves oregeno, minced
4 leaves rosemary, minced (can use dry spices if desired)


How Do I Make Veggie and Herb Pasta?

Here is how you make Veggie and Herb Pasta:

Bring large saucepan to medium heat. Spray with cooking spray. Saute onion and garlic 2-3 minutes, add green pepper and saute for 2-3 minutes, add zucchini, saute 1-2 minutes, reduce pan to med-low and put a lid on it. In pot of boiling water cook pasta and ear of corn 7 minutes (cooking time for pasta may vary, go with the time listed on the box). Meanwhile, remove saucepan from heat and pour 1 and 3/4 cup of the milk into pan. Return to medium heat and stir until boiling. Mix remaining 1/4 cup milk with 1 cornstarch until smooth, stir into milk-veggie mixture. Stir until thickened, 1-3 minutes after sauce has come to a rapid boil. Drain pasta and corn. Toss pasta with olive oil. Cut corn off of ear, set aside. Toss all herbs into sauce mixture, stir until well incorporated. At this time also season sauce with desired salt, pepper, etc. Place tomato, corn, pasta in saucepan with sauce, toss until all is well coated.
