Found this recipe in a cookbook I bought in Texas and altered it a bit. Added more veggies, less oil~ its amazingly tasty. Makes a meal in itself but can add meat or fish to the side if desierd. I had it one time with cod and once with chicken on the side so far.

1 TB olive oil
1 onion finely chopped
3 cloves garlic, minced
3 medium carrots finely chopped
3/4 cup lentils
3 cups water
salt and pepper to taste
2 cups spinach
1 cup asparagus chopped
2 cups whole wheat pasta
3 oz feta cheese I use low fat
soft goat cheese sprinkles

(can add 1 finely chopped celery stalk, and chard and or kale)

Here is how you make Tweeked Whole wheat Pasta with Lentils:

Saute mushrooms onions and garlic in oil till soft, add carrots asparagus and (celery) if you wish~cook 1 more minute after each addition stirring constantly.Add the lentils and water, simmer uncovered 20 min or until lentils are soft and most of the liquid is absorbed. Season with salt and pepper to taste.Cook pasta in lg pan as per package directions. when done drain well.cut spinach (could use kale or chard also) into strips and add to lentil mixture and stir into lentil mixture, keep warm. Add the pasta to the lentils mix well season to taste and spoon into bowls, sprinkle cheeses over and eat hearty.Serve with bread/rolls and meat if desired.
