1 medium onion

2 cloves garlic

1/2 tsp ground coriander seed

1/2 tsp ground cumin seed

3 cups of canned tomatoes (diced or whole, if whole chop roughly)

8-9 oz frozen artichoke hearts (about 1 package)

15 oz can of chick peas/garbanzo beans, drained and rinsed

1/2 cup feta cheese, crumbled

salt and pepper to taste (not included in calculations)

As you cook the pasta (according to package directions), saute the onions until translucent (I used olive oil but did not include this in the calculations, you could use cooking spray), about 5 minutes. Add the garlic, coriander, and cumin and cook for another minute or two. Add the tomatoes and artichokes, and cook for about 10 minutes. (You can cook for longer if you'd like, and it would improve the flavor, but this is the quick version.)
