Saute onions in olive oil until translucent. Add tomatoes (including juice), cover and cook on medium low for 10 minutes. While tomatoes are cooking, use a spiralizing tool to cut zucchini and squash into "pasta". (If you don't have a spiralizer, simply cut vegetables into extremely thin strips.)Add vegetable "pasta" to cooked tomatoes (most of the liquid will have evaporated). Cook for 1-2 minutes, just enough to heat vegetables.
