9 oz chicken or vegetable broth
1/2 cup chopped leeks
1 garlic clove
1 tbsp olive oil
8 tbsp fresh basil (chopped)
Linguine (6 oz)
Salt

6 tbsp Parmesan cheese


How Do I Make Pea and Basil Linguine?

Here is how you make Pea and Basil Linguine:

Cook pasta according to directions. Set aside.Melt butter in skillet. Sautee leeks in 1 tbsp butter (about 3 minutes). Add frozen peas, 6 oz of broth and cover, simmer for 5 minutes. Take about 1/2 of this mixture, add 4 tbsp basil, 3 oz of remaining broth, and 1tbsp olive oil. Puree in blender. Put pureed mixture in bowl, stir in remaining peas from skillet. Set aside.Sautee garlic in remaining 1 tbsp of butter (about 3 minutes). Add back in pea mixture. Salt and pepper to taste. Toss with pasta.
