*Soy Sauce, 3 tsp (could also use low-sodium)
*Organic Natural Peanut Butter (Creamy), 1.33 tbsp (chunky can also be used if desired)
*Birds Eye Yellow and Green Zucchini Squash, 1 serving (can also use fresh)

Here is how you make Peanut Summer Squash Tofu:

1. Assemble ingredients. Open tofu package. Slice desired amount into small cubes. While doing this, set the burner to high. 2. Add 1 tsp oil. Add tofu. Allow tofu to become reasonably brown on all sides, but not burnt. Add the peanut butter, then add soy sauce.3. Add summer squash.4. Stir frequently and allow squash (if frozen) to become hot, thawed, and well-cooked. Allow the peanut sauce to cover everything. Reduce heat to between medium high and medium.5. Cook until everything is evenly cooked and sauce is well distributed.6. Remove from burner, turn off heat, allow to cool somewhat, and transfer to bowl.
