This is the first real recipe I made after becoming vegetarian, and everyone loves it. It's very simple and easy.You're going to need a BIG wok, preferably American style (flat bottom with pan handle on one side and grip on the other side), but if you're used to an Asian wok, I'm sure that's fine.Note: You NEED extra-firm tofu for this recipe. Crumbled tofu will be completely the wrong texture and make the recipe much less appetizing, despite having the same flavors.

*Summer Squash: About 3-5 small ones, sliced or cubed. I wrote above that the total is 4 cups, but it doesn't really matter
*Zucchini: About the same as the squash. Again, there's no real need to be specific, just make it up as you go.
*Tofu, extra firm: Remember to drain and cube. A lot of people think they don't like tofu because they didn't do this step. It also helps it absorb flavors better.
*Thai Peanut Sauce: Look at the label to try get one that's not super salty or full of sugar. I listed this is as "vegan" but I suppose there may be some sauces that are not.

Here is how you make Squash, Tofu, Zuke peanut stir-fry:

I sort of guess-timated on prep and cooking time. For me, slicing takes a while because I use a mandolin and am klutzy. For others, it'll take much less time. It also depends on if you have the tofu pre-drained or not (that takes about half an hour, so don't wait until you're hungry) and how experienced you are with stir-fry and squash. My first couple times took forever because I stirred too much, picked up the pan too much, or didn't get the heat high enough.1) The first thing you want to put in is the tofu. This is just personal taste to me, but I like to cook it down as much as possible to make it as "meaty" as possible. When it's shrunk a bit, add a bit of peanut sauce so it can go ahead and start absorbing that flavor. Stir around and cook some more.2) Toss in the sliced or cubed squash and zucchini. The reason I use a mandolin to prepare mine is that if they're not all pretty much the same size, trying to get them all cooked the right amount is a major hassle.3) When the squash and zucchini are soft (but not mushy!), start adding more peanut sauce and stirring. You want to cover everything but not make it too soupy. If you're serving on top of rice, you may want it dripping with sauce to get the flavor into the rice as well. If you're serving it strait, you may want a minimal amount of sauce cooked further until the sauce coating has become a bit dry.
