3 medium sweet potatoes
1 T cumin powder
1 tsp oregano
2 large jalapenos

Here is how you make Peanut Stew (vegan):

Dice the red onion and sautee briefly in the olive oil.Add 1 cup of water, the miso and the garlic. Continue to sautee until the onion and garlic are soft.Add the tomatoes and coconut juice and continue to simmer.Peel and dice the sweet potatoes into bite size chunks.Add the sweet potatoes, cumin and oregano to the tomato mixture.Simmer for 10 minutes.Cut Jalapenos in half long ways.Remove seeds from jalapenos (unless you want very spicy stew), and slice finely.Add the spices, and jalapenos to the stew.Simmer until the potatoes are almost soft enough to eat.Add the peanut butter and 1 cup of water.Simmer until potatoes are soft.Enjoy.Number of Servings: 5Recipe submitted by SparkPeople user MMWAGENER.
