Here is how you make Senegalese (West African) Peanut Stew:

- Dice onion and jalapeno (remove jalapeno seeds if you don't want a lot of heat) and sautee on medium in butter or ghee (you can use any cooking oil that you want, though!).- Add ginger, garlic, cinnamon, cumin, red pepper and coriander and cook for 2 minutes, stirring. The oil in the pan will release a lot of aromatics and flavor.- Add vegetable stock, tomato paste and peanut butter.
