1-2 tbsp shredded low fat cheddar cheese (optional, not included in nutrition facts)

1. heat olive oil in large pot on medium heat2. add chopped onions and garlic3. saute till translucent4. add cauliflower, canned tomatoes and yam 5. simmer for ~ 1/2 hour on low heat (test that cauliflower and yam are both soft but not mushy (make sure you cut both so they are ready at the same time6. add 1 cup water, peanut butter and spices7. simmer for another 10 minutesServe hot.Sprinkle with low fat shredded cheddar cheese (optional)Makes 10 1.25-cup servings.
