2 tsp A Taste of Thai - Red Curry Paste (by LISAG418)
3 tsp Garlic
1 fl oz Orange Juice
.5 fl oz Lime Juice
1 cup, strips or slices Carrots, raw
1 cup, pared, chopped Cucumber (peeled)
4 serving Yellow Bell Pepper, 1 serving equals 1.8 oz or about 10 strips
8 tbsp Basil
1 cup Bean sprouts
1 cup, chopped Scallions, raw
8 tbsp French's 'french fried onions'

Here is how you make "Take Out" Thai peanut noodles with veggies:

In boiling water cook one box(13.75oz) Barilla Whole Grain Thin Spaghetti until Al Dente ( 7 min) While paste is cooking, in a small sauce pan- whisk the Peanut butter, vinegar, oil, curry paste, orange juice, lime juice and pressed garlic until it form a smooth creamy thick sauce. It will taste a bit hotter then you expect- but when it goes on the noodles it dilutes the heat. ( or if you LIKE heat add extra curry paste!) Don't forget to stir the noodles so they won't stick.Then chop all your veggies (Carrots, cucumber , scallions and pepper) as well as your thai basil. ( You can also substitute cilantro of you don't like basil) Make a pretty tray will all the colors of toppings. including the beansprouts and the fried onions( in a small separate bowl to stay crisp) and Set all aside.Drain the noodles well and mix the sauce in until evenly coated. Add * optional crushed peanuts to the toppings "Buffet" ( Not included in the calorie count) ANd divvy the noodles up into 6 large shallow bowls. Allow each guest to top with the ingredients they choose. Works great with grilled teriyaki, of siracha marinated chicken( Like Costco sells) if you want a "meat" , also works with shrimp! Use your imagination.
