Preheat oven to 475F.Break off thick stems of asparagus.Cut asparagus into 1/2 inch lengths.Blanch the Asparagus in boiling water until bright green and then rinse in cold water. Beat the eggs with salt and pepper.Heat the oil over medium heat, add asparagus and cook covered for 10 minutes or until asparagus is tender and season w/ salt & pepper.Add red peppers to skillet.
