Here is how you make Baked Squashperd's Pie:

Cook rice and garbanzo beans (I use a rice cooker and combine both, adding garbanzo beans about 15 minutes into rice's cooking time) - it automatically shuts off.While that is going, bake the squash. I used 1 large butternut, 1 medium and 1 small green kabocha squash. Cut them in half and bake on baking sheet at 350degreesF. Flip half way; total baking time about 30 minutes.Saute onions in the olive oil. Add thyme, and salt and pepper to taste.Mix onions with rice and beans. Layer on bottom of baking dish.Mash the baked squash with some thyme, salt and pepper.
