For the crust:
-1.5 cups walnuts (whole or pieces)
-4 tbsp smooth all-natural peanut butter (we use the self-ground just-peanuts stuff from Whole Foods)
-1 tbsp water
-1 tbsp maple syrup
-1 tbsp ground cinnamon

For the filling:
-16 oz Silken Extra-Firm tofu
-1 cup smooth all-natural peanut butter
-1/4 cup Stevia-in-the-Raw (zero-calorie sweetener)
-1/4 cup Splenda Brown Sugar Blend (questionably vegan- you can substitute molasses and additional Stevia, although I'm not sure about the ratios)
-2 tbsp unsweetened soy milk (we use Whole Foods' 365)
-2 tsp vanilla extract

***Save some extra walnut pieces to sprinkle on top of the pie before serving!


How Do I Make Brittnie's No-Bake Vegan Peanut Butter Pie?

Here is how you make Brittnie's No-Bake Vegan Peanut Butter Pie:

Crust:1) In a food processor or blender, mix the walnuts until they are ground well or have only small pieces (your preference)2) Melt the peanut butter for 30 seconds3) Combine the walnuts, peanut butter, and all the other "crust" ingredients in a stand mixer4) Press the crust evenly into a 9-inch pie tin or brownie pan. Because this dish is no-bake, the material doesn't really matter... I used a brownie pan because I didn't have a pie tin around.Filling:1) Combine all of the "filling" ingredients in a blender or food processor until they are smooth.To make the pie:1) Scoop the filling mixture into/ onto the pie crust and spread it evenly.2) Freeze the pie for at least 2 hours to set it.3) Remove the pie from the freezer about 20 minutes before serving.3) Sprinkle the extra walnut pieces on top of the pie before serving (or add whatever delicious garnish you choose)4) Slice and enjoy!Serving Size:?Makes 9 bars (if in a brownie pan) or slices (if in a pie tin)
