Here is how you make Curried Shepherd's Pie in a Skillet:

Boil potatoes until they fall apart when poked with a fork. Mash with the soymilk and set aside in a warm place.Spray a cast-iron skillet with canola oil or olive oil. On med-high heat, saute the onions until translucent. Add the garlic, ginger, celery, and carrots and saute three minutes more. Add the curry, spices, or herbs, and then the green beans, red beans, and 2 cups veg broth (I used 1 cup V8 Tomato Herb soup to replace 1 cup broth). Stir to combine. Simmer for 20 minutes, until vegetables begin to soften.There should still be some liquid left in the pot, but if there isn't you can add some of the reserved potato water to the skillet. Whisk together some hot water (potato water works) with 1 tbsp cornstarch until smooth. Add mixture to skillet, stirring until thickened. If you prefer, you can skip this part or add more or less water.Remove from heat. Top skillet with potatoes.If you prefer a crispier, firmer top, pop the whole thing into the oven under the broiler until the top is browned. Serves at least 6.
